My name is Paul Baldi, I’m originally from Reims ( nobody is able to say it properly) in champagne.
I’m a passionate and Curious Sommelier. I use to work mostly in fine dining and Michelin stars restaurants over France.
I had my first experience in USA in 2018 at Bar Creen in San Francisco. Today I’m working for the Vault on 555 California. Im big fan of champagne growers , and Chenin blanc and Syrah lover.
