This Limoncello Crepe Cake was conceived on a whim in the spirit of creative cuisine from existing ingredients. I created a zingy spiked lemon yogurt to separate my whole-wheat johnnies with hidden pockets of passionfruit curd. The candy-sweet finishing syrup was a limoncello and back-of-pantry tropical juice box reduction. It was quick, healthy(-ish) and the perfect mood boost to brighten the week ahead.
